Chocolate apricot balls

The kids will love these Chocolate apricot balls, a delicious afternoon snack or special treat in their school lunchbox.

Ingredients:

  • 200g dried apricots
  • ¼ cup caster sugar
  • 2 Weet-Bix
  • 1 tbs water
  • 50g dark cooking chocolate, melted

Method:

  1. Place apricots, sugar and Weet-Bix into a food processor and process until smooth. Add water gradually and continue to process until well combined.
  2. Using wet hands, form mixture into balls.
  3. Drizzle the balls with chocolate and leave to set.
